Papas arrugadas are so called because they were traditionally cooked in seawater and, due to the dehydrating effect of the salt, their skins became wrinkled. Cooking them in salted water or seawater gives the potatoes a unique flavour and texture. Mojo, meanwhile, is a traditional Canarian sauce used as an accompaniment to a wide variety of recipes.

Today, this is one of the most recognised dishes in Canarian cuisine. As well as being served as a starter, it can also be used as a side dish for meat and fish.

2. Rancho Canario

Although there is no single recipe and there are many variations in the preparation of rancho canario, the dish always includes vegetables such as potatoes and carrots, which accompany and enhance the flavour of the meat.

Its main ingredients include beef and pork, which take on a special flavour when combined with potatoes, carrots, courgettes, chickpeas, chicken, corn on the cob, cabbage, chorizo and green beans, among other products.

6. Escaldón de Gofio

Escaldón de gofio is a traditional Canarian dish based on gofio, a flour made from roasted cereals such as maize.

To prepare this recipe, the gofio is mixed with fish stock, and small pieces of potato and, if desired, chopped onion can also be added.
